//Ethnic food: Installment #1//

11  comments

So….I am a very VERY big fan of trying new food….especially food from other countries.  I adored the Philipine egg rolls and {cool} sauces a friend brought to our 2012 Christmas celebration.  I loved the Chinese meal my mother and little siblings made awhile back.  Of course, Mexican is kinda my whole family’s favorite, and it’s one enjoy, too.  Middle Eastern food is soo good…I just had a quinoa salad for breakfast that reminds me of Middle Eastern couscous.  And I had so much making {and eating!} French-style baguettes recently.
I love it that my whole family is adventurous and not-picky when it comes to food.  They are such troopers about trying stuff that most people think is “weird”.
…………………………………….
And now…….here is the most recent ethnic food we’ve tried.  My family all gobbled it up and those I asked said they liked it.  (I am slightly prejudiced since I love Indian food.:)
{Balti Chicken}
If you want to make it…here’s how.  Remember that this recipe feeds 12 people, so you may want to cut it in half (or fourths!) for a smaller family.  Or just make the whole batch and refrigerate or freeze the left-overs.
Ingredients:
*4 med. onions, sliced
*4 TBS olive or coconut oil
*1 14.5 oz. can tomatoes
*1/2 cup water
*1/4 tsp. cardomom
*1/4 tsp cinnamon
*10 peppercorns, any color (yes, whole peppercorns)
*1/2 tsp. cumin
*2 tsp. salt
*2 tsp. chili powder
*2 tsp. masala spice powder
*2 tsp. fresh ginger, finely chopped (you could sub 1/2 tsp. ginger powder, but fresh is always best!)
*2 garlic cloves, minced
*6 large chicken breasts, cubed
*1/2 cup yogurt
Directions are below the photos.
 Saute onions in oil till golden brown.

Add tomatoes, water, and spices and stir well.
 This is the masala powder I used.  Any kind should be fine.
 The chicken need not be small or precise!
 Add the chicken, stir, and cook on high heat until starting the bubble, then turn on low and cook for about 15-30 minutes.  I really am not sure about the cooking time…..I just kept stirring and checking it every so often.  Basically, make sure the chicken is cooked through!
 This is how it looks when it’s done cooking.

We had it with jasmine rice, any rice will work.  If you want to be adventurous with the rice, look up a recipe online for rice with vegetables!  The pairing of rice (first fried, then cooked) with vegetables is fabulous.

  1. This looks delicious, I might try it. The jasmine rice here is very expensive, I think Basmati would do just fine.
    Blessings to all the family.
    P.S. Pop over to my blog and look out for Munchy Monday recipes from Catalonia 🙂

    1. (From what I've read, Basmati is the main rice in India, Pakistan, and the surrounding countries, so using it would make it more authentic, Lady Violet.)

      Yay, Allison! I didn't get to meet you when y'all were in San Mateo? Satsuma? a few months ago, but I think it's neat that you like to try out ethnic foods on your family too. 😉 I love Indian and Middle Eastern food, and want to explore some Tagalog and Slavic dishes in the near future. Among other things, once I served cold, canned, spicy Spanish octopus. That's a story in itself… 😀

      God bless.

  5. 505986 996351Hi this really is somewhat of off subject but I was wondering if blogs use WYSIWYG editors or should you need to manually code with HTML. Im starting a weblog soon but have no coding understanding so I wanted to get guidance from someone with experience. Any assist would be greatly appreciated! 755576
